Noodles are great. You can boil them, fry them, stuff them into a soup, or eat them cold with a peanut sauce. Pretty much every place on earth has its own kind of noodle. Italy has spaghetti. Japan has ramen and udon. China has lo mein and a hundred other kinds. Vietnam has pho. The list does not really stop.
The basic idea is real simple. Take some flour, mix it with water or egg, and stretch it out into a long thin shape. Then cook it. That is it. That is the whole noodle.

Noodles are cheap to make and they fill you up. A bag of dry pasta can feed a whole family for a couple bucks. That is hard to beat. They also store forever in the pantry, which is why people have been making them for thousands of years.
Fresh noodles are a different thing. Fresh noodles have a chewy bite that dry noodles can not really match. If you ever get the chance to eat fresh hand-pulled noodles at a real noodle shop, do it. You will see what the fuss is about.
